Abstract

Vegetables play a vital role in human nutrition, providing essential vitamins, minerals, dietary fiber, and bioactive compounds that are crucial for maintaining health and preventing diseases. Beyond their nutritional significance, vegetables contribute substantially to the agricultural economy, supporting the livelihoods of millions of farmers, traders, and allied industries involved in seeds, fertilizers, pesticides, and post-harvest management. The increasing demand for high-quality vegetables, both domestically and internationally, has highlighted the importance of modern cultivation techniques, value addition, and sustainable production practices. The purpose of this book is to provide a comprehensive overview of vegetable science, covering aspects ranging from crop origin, genetics, and physiology to cultivation practices, pest and disease management, post-harvest handling, processing, and marketing. Emphasis has been laid on integrating traditional knowledge with modern scientific advances to enhance productivity, quality, and economic returns.
This book is intended to serve as a valuable resource for students, researchers, and agricultural professionals. It aims to equip students and budding horticulturists with the foundational and applied knowledge necessary for effective vegetable cultivation. For researchers and practitioners, it offers insights into innovative techniques, crop management strategies, and emerging trends in the vegetable industry. By bridging the gap between theory and practice, this book aspires to contribute to sustainable vegetable production and improved nutritional security.
